摘要：

    HACCP體系是一種預(yù)防性質(zhì)量控制體系，在食品工業(yè)中的應(yīng)用不斷增多。本文介紹了HACCP體系的原理、特點(diǎn)，綜述了HACCP體系與食品安全性的關(guān)系、HACCP體系在食品工業(yè)中的應(yīng)用及其自動(dòng)控制系統(tǒng)和控制軟件。對(duì)該體系在食品工業(yè)應(yīng)用方面所面臨的問題進(jìn)行討論，并介紹了HACCP體系在食品分配流通等領(lǐng)域應(yīng)用的進(jìn)展。

    HACCP system is a defending system Of quality control，beingadopted widely to assure quality in food industry． The principles and character of HACCP were described． the paper reviewed the correlation between the HACCP system and the safety of food,at the same time,the application of HACPP system in food industry and the autocontro1 system and software for HACCP system were also summarized the problems encountered in the industry were discussed and some developments of the application in the course of distributing and circulating and circulating were presented.

    0前言

    HACCP的全稱是 Hazard Analysis Critical Control Point，即危害分析關(guān)鍵控制點(diǎn)。它是一個(gè)以預(yù)防食品安全為基礎(chǔ)的食品安全生產(chǎn)、質(zhì)量控制的保證體系，由食品的危害分析（HA,Hazard Analysis）和關(guān)鍵控制點(diǎn)（CCPs,Critical control Points）兩部分組成，被國際權(quán)威機(jī)構(gòu)認(rèn)可為控制由食品引起的疾病最有效的方法，被世界上越來越多的國家認(rèn)為是確保食品安全的有效措施。
