Abstract:
HACCP system is a defending system Of quality control,beingadopted widely to assure quality in food industry. The principles and character of HACCP were described. the paper reviewed the correlation between the HACCP system and the safety of food,at the same time,the application of HACPP system in food industry and the autocontro1 system and software for HACCP system were also summarized the problems encountered in the industry were discussed and some developments of the application in the course of distributing and circulating and circulating were presented.

0前言
HACCP的全稱是 Hazard Analysis Critical Control Point,即危害分析關鍵控制點。它是一個以預防食品安全為基礎的食品安全生產、質量控制的保證體系,由食品的危害分析(HA,Hazard Analysis)和關鍵控制點(CCPs,Critical control Points)兩部分組成,被國際權威機構認可為控制由食品引起的疾病最有效的方法,被世界上越來越多的國家認為是確保食品安全的有效措施。
